Can't seem to edit the type line in these...or find appropriate pictures. BUT ITS HERE ANYWAYS~
Wanted to try and do something with grafting or creature modifying but it didn't really fit and I needed a transform condition so it became something else with creatures. Destroying them seemed out of the flavor but bouncing is pretty firmly Blue and acts like a sort of 'modification' so I went with that. Its a simple, easy to understand, condition. Madness cost circumvents some mana color issues (a play on the modification theme) but the transformed creature can't employ its actual ability unless you've got the right colors (and you can somehow bounce without Blue...) The activated ability is Mystic Eyes Magic-ified and if I knew how to make keywords I'd totes make Mystic Eyes a keyword.
Shroud is just a good ability and is Blue and White territory, protection from Black prevents Garra from smashing its teeth in and Shroud similarly makes that difficult (luv u 2 bb)

Also the color wheel picture is an extremely simplified version, colors have a great deal of nuance and combination colors mean different things than just smashing the two together more often than not. Someone whose Black/White isn't an organized power-hungry soul, theres a lot more implied in the association and you still have gradients....its complicated and an inexact science. Sticking by guns that TK is Green though, Green/Black would work but I get a strong Green vibe out of the hivemind.

Hivemind in MTG is colorless (Slivers for all colors; the card Hivemind is, literally, blue).
Regeneration is Black and Green, with secondary white.

I like your list. I'mma just edit yours to reflect my personal stance on them. Just how I see them.

Anyways here are my personal assessments...
Garra/Umi - Black/Red <- I actually kinda see Umi as U/G. He doesn't feel "Rakdos" to me. Think about it. You designed an animal to help people. Sounds pretty Simic to me. Now, hatred might be different, and I have limited experience with Umi, but what I /have/ read seemed pretty U/G.
Amaya & Aya - White/Blue <- Azorious seems a little... orderly, don't you think? Also the fire and ice thing makes U/R seem more fitting theme-wise. Especially as a flip card like you made.
Souta - Red <- True. I should do a different Souta. I thought about making him a level up card later anyways.
Erasmus - (Don't know the character well enough) <- I stand by my "Nazi" colors for him XD He's a complex fellow.
Tova - White/Blue <- Don't know regular Tova well enough, but Azorius just seems like such an odd one to place.
aTova - Black/Blue <- Hmm... Why blue here? True, he does get experimenty sometimes. Maybe ATova should be full-on Grixis though to round him out.
Ine - Green/White <- That feels wrong... I'm not 100% sure what's better, but white green, with its healing, naturalism, and growth do not seem very Ine.
Kohara - Blue/Red <- U/R paired makes me think Izzet, and Izzet makes me think reckless, mad genius style intellect. Once again, doesn't feel quite right to me. But I'm not 100% on what to replace with. Maybe something with green?
Junko - White <- Yep.
Jasper - Green/Red <- Maybe. Don't know him well enough.
Kyou - White/Black <- I can see it.
TK - Green <- 5 color. I vote 5 colors.
Adimus - White/Red <- Obviously agreed.
Miki - Blue <- Maybe that's U/R. Little more chaotic and impulsive.

I would DEFINITELY work Zanpakuto much differently and do something like the following...
The basic format for a Zanpakuto being that its Equip cost becomes 0 for its appropriate wielder (and they have to be referenced by name in order for the search to have a valid target) which enables them to, ya know, work and be searchable. Then add the effect which shouldn't only apply to one creature or else its a dead draw 99% of the time which is a terrible card. Really the only reason to use a Zanpakuto card would be if you had more abilities you wanted to add to the card than fit, with reasonable readability, and you don't mind adding some additional costs and another space in your deck to gain them (and they better be worthwhile at that point.)
